Cape Cod Wedding Weekend

This weekend we headed to Brewster, MA on Cape Cod for our friends wedding weekend!  It was held at Ocean's Edge in Brewster.
They rehearsed... on Friday night... (my husband was in the wedding...)
And then we ate some yummy food... Corn, Ribs, Brisket, Pasta Salad, and Salad...
After dinner, we headed back to the beach for a bonfire...
 and what's a bonfire without some s'mores... I love s'mores...
 YUM! It may not quite be beach season or summer, but its never too early for s'mores...

 Saturday on the Cape was beautiful.  It was mid 60s and sunny and a perfect day for a wedding.  A beach wedding no less!  Michelle looked gorgeous walking through the sand...
...and look at this view- it was gorgeous!
 I seriously love Cape Cod.  I really think its one of the best places in the world! The ceremony was pretty quick and they had a lot of personal touches that I loved.  After the ceremony, the girls got together for a picture!
I'm very lucky... I've become so close with all these girls- the wives and fiances of Dave's best friends from high school!!!

 Oh and then the food- the appetizers were delicious!!! But I was too busy socializing... and dinner-

 I was so full I never had cake! But there was lots of dancing : )
It was a beautiful wedding weekend and I couldn't be happier for Michelle and Ethan.  The venue and weather was beautiful!

Running & Giveaway Winners!

Theodora recently posted about overhearing two co-workers talk about how happy they were that they worked out 3 days that week.  Theodora thought in her head "that's a bad week for her."  I'm with you Theo.  If I had it my way, I'd work out everyday... but its that whole work thing that gets in the way. And sleep. And life.  I'm often extremely jealous when I see that Ali works out in the AM and PM. (Ali- you rock for running in the AM and gymin' in the PM!!!) I set my alarm and pack my gym bag EVERY night.  I am just not always so successful at waking up.  My goal is always to workout 4 days a week, sometimes 5 whenever I can get there or outside. But inevitably, something will go wrong- I'll oversleep, realize I have no time to sneak away during the day or can't go after work.  So if I have to take 2-3 days off a week, that's what I have to do.  The thing is, I have a long commute and a husband who I enjoy cooking for.  So yes, sometimes, commuting, work and cooking get in my way of a sweat session but I seriously wish it didn't.... I know I know, excuses, excuses...
Ps- that is the best commercial EVER!!! And my friend edited it!!!

But I have some solutions.. I felt like I was missing the gym too much, so I joined a second gym near my house- one that's only $10bucks a month! 
Even if I only get there a few times a month, it will be worth it. Last week, I went there twice and I worked out 5X.  I also started going back to spinning and I love it. And I have some other interesting news... some of you know I've never done yoga.  Yep, never done it.  Well, there was a Groupon for Bikram Yoga near my house so I bought it!  10 sessions- $20bucks!  Now I need to make sure I go! Luckily I have a friend who also has never done yoga who bought it as well : )

Monday May 2nd- Lunchtime workout- 2 miles on the treadmill, 45 min spinning
Tuesday May 3rd- PM Workout- 3.1 miles on the treadmill, stretching
Wednesday May 4th- PM Workout at the new gym- 3.1 Miles on the treadmill with Nancy, Lifted Arms
Thursday May 5th- Off- Cinco De Mayo (is that excuse enough??!?) Went to Tico for dinner with friends- review coming....
Friday May 6th- Off- Day after Cinco De Mayo (i.e- too many margeritas....)
Saturday May 7th- 3.1 Miles on the Treadmill at new gym
Sunday May 8th- 4.70 miles outside around my neighborhood, 43 minutes/9:07 pace- 8:20, 9:22, 9:45, 8:57, 9:32
Monday May 9th- Lunchtime workout, 45 min spinning


And Today- Speed Tuesday! My first speed workout since the marathon!!!
I get my workouts from a local running group that adapts them from the BAA-
This weeks workout didn't seem intimidating to me since there was a lot of 200s.  Plus I'm not in marathon training (yet) so I was excited to do a shorter interval speed workout even if I do have to do them on the treadmill....
Workout: 4x200, 2x400, 800, 2x400, 4x200 (equal Rest Interval)
1 mile at 10 min pace
4X200s with 200 rest in between each one at 54 (7:14 pace), 49 (6:34 pace), 48 (6:26 pace), 54 seconds (7:14 pace).
2X400 at 1:51 (7:26 pace), 1:47 (7:10 pace), 400 rest. 
800 at 3:51 (7:44 pace). 400 walk, 400 jog at 6.0. 
2X400s at 1:48 (7:14 pace), 1:44 (6:58 pace), 400 rest. 
4X200s at 47 (6:18 pace), 45 (6:02 pace), 44 (5:54 pace), 43 (5:46 pace) with 200 rest. 
.25 mile cooldown (ran out of time!)
6.25 miles, 60 minutes.
If you are curious- I measure distance on the treadmill and time on my handy $10 watch from target.  I write down those times as I go during the workout and then plug them into the Pace Calculator on Cool Running later on.  Pretty cool I ran some 200s at 5:46 pace.

Burgers and Babies

I already wrote this entire post and blogger deleted it.  Depressing!

Well because I've been in a rut in the kitchen, I decided to have another theme week.  This week I went with burgers.  Specifically, burgers I've had jotted down in my menu-planning notebook but have yet to cook.  The first I found in the book was Cara's Brie Stuffed Turkey Fig Burgers.  I changed quite a bit about this recipe but the idea is all Cara- mixing sweet figs with melty brie cheese and healthy turkey is a win-win. My husband and I loved this burger!
I know I know, flash photography- but it was late by the time we ate!
Brie Stuffed Turkey Fig Burgers
Ingredients:
1/2 cup dried figs chopped (if fresh figs are in season, use those!)

1 cup Pom Juice (Cara used Marsala wine- I had a bunch of pom juice from the boston expo and didn't feel like opening a bottle... so I went with pom juice and it worked wonderfully!)
1 lb ground turkey
1/4 cup minced shallot or purple onion
freshly ground salt & pepper
1 teaspoon Herbs de Provence
 brie cheese, without rind, cut into 1 inch pieces
Fresh arugula
Hamburger rolls of choice
Instructions:
Combine the figs and pom juice in a small saucepan. Bring to a boil, then reduce heat and simmer, partially covered, until the liquid is almost entirely reduced (about 10-15 minutes.)  - I think I cooked a little too long since most of my liquid evaporated : (.  I also used half of the mixture inside the burgers.
Meanwhile, heat a nonstick pan over medium heat. Combing the ground turkey with the shallot or onion, salt and pepper, and Herbs de Provence and half of the fig mixture (cool it first) Form the mixture into four patties. Take half of one patty and stuff 1 inch piece of brie in the center.  
Enclose with the remaining meat mixture and place on the pan. Cook for about 15 minutes, turning halfway through, until meat is no longer pink in the center. Place some arugula on the bottom half of each roll, and top with a burger and half of the fig-pom sauce.


I mean look at that cheese melting out of this burger!  It was sooooo good : )
Burger 2: Chicken Apple Sausage Boats.  I got the inspiration for this dish from Taste of Home, a cooking magazine my cousin had lying around her house that I perused through when I stayed with her for the National Half Marathon.  I jotted down the ingredients for this dish but luckily found the recipe online on a site called Noble Pig. Their site made this dish look absolutely gorgeous.  Oh and they served it for breakfast.  I made it for dinner.  Basically this dish combines the sweetness of apples with the spiciness of cayenne and chicken/pork.  The best part is you get to put a runny egg on top!  But you need to create a deep well.  Something I did not do very well- ha a pun!  Otherwise your egg will most definitely runneth over.
Chicken-Apple Sausage BoatsAdapted from Cuisine at Home and Noble Pig
Ingredients:

1/2 pound ground chicken
1/2 pound of pork
2 Pink Lady apple, grated
1cup minced onion
1 Tablespoon brown sugar
3 Tablespoons minced fresh parsley, divided
1 teaspoon Kosher salt
1 teaspoon black pepper
1/4 teaspoon cayenne
2 teaspoons olive oil
4 eggs
4 buns or bagels
Instructions:

Combine chicken, pork, apple, onion, brown sugar, 1 Tablespoon parsley, salt, black pepper and cayenne in a bowl; divide into four equal portions. Shape each sausage portion into a 1" thick patty, then press a 2" wide well in the middle of each patty, leaving a thin layer on the bottom of the patty. Heat oil in a large nonstick skillet over medium-high.  Add patties, well side down and cook until browned, about 4-minutes; turn over. Gently crack an egg into the well of each patty.  Cover pan and cook over medium-low heat until egg whites are set and yolks begin to thicken, about 7 minutes ( I probably cooked too long).
Serve over a toasted bun and garnish with remaining parsley and salt and pepper to taste.  We also liked it with hot sauce.


Cut in half and let the egg ooze out in deliciousness.  I mean is there anything better than a runny egg?  Is there?  I don't think so!
One of my best friends Dana begs to differ though.  Whenever I make her eggs, she also asks for them "not to pee on her."  Classy D.  Classy.


The next burger was a combination between Emeril's Spicy Turkish Burgers and a White Bean Burger.  I added store bought tzatziki sauce and made a side salad of cucumber, tomato and red onion mixed with greek seasoning, red wine vinegar and olive oil!  And I served the burger in a pita.  Yum!
Spicy Turkish Chicken and Bean Burgers
Ingredients:
1/2 pound ground chicken 
1/2 pound ground pork
1 can of Cannelini Beans, lightly mashed
2 large egg whites
1/2 cup fine bread crumbs
1/4 cup finely chopped onion
1/4 cup chopped parsley
1 tablespoon minced garlic
1 teaspoon salt
1/2 teaspoon cayenne
1/2 teaspoon ground coriander
1/4 teaspoon ground allspice
1/4 teaspoon ground cumin
Spray olive oil
Pita bread and tzatziki sauce for serving

Instructions:
In a large bowl combine chicken, pork, beans, egg whites, bread crumbs, onion, parsley, garlic, salt and spices. Mix gently until well blended. Divide the seasoned meat into 4 portions. Flatten slightly.To a large nonstick saute pan over medium high heat, spray a thin layer of olive oil. Slide the chicken patties in one at a time. Cook for 10 minutes total, about 5 on each side. Serve with pita bread and tzatziki sauce.

 And I got to meet Gretchen's new bundle of joy!  Gretchen delivered last Sunday and her baby is adorable!  I was so happy I was able to meet baby Fausto!  Even if he was sleeping the whole time : )

Those were the dishes of the week!  Don't worry I will soon post about my running too... I ran 5X this week!  The most I've ever run in awhile in a single week- but I never went over 5 miles.  Still in marathon recovery for another month or so...

Product Review & Giveaway!

Restaurant Review: Village Smokehouse + Red Sox

 Saturday early evening before my brother and I went to the Red Sox game, we headed to the Village Smokehouse in Brookline.  Now I've been here before and it's definitely heavy food, but its also delicious.  I'm always super impressed with their barbecued meats and BBQ sauce.  The restaurant has a really cute theme to it.  "Ain't nothin' fancy mind ya, just a place where good folks go."  Love that saying!  Check out other fun sayings they had all over their menu!
My favorite- "I used to eat all natural foods until I realized so many people die of natural causes." hehhe!
Complimentary Corn Bread to start...

I decided to try to be lighter and order the Smoked Grilled Chicken Death Sandwich.  Death because I added jalapenos.  I also added cheese but held the bacon (for once).

My mom and brother ordered the Smoked Pulled Pork.  I had some bites and it was sooo good.  The sweetness of the BBQ sauce made it even better.
 And of course we got sides of Sweet Potato Fries and Baked Beans- how can we resist?
 After that, my brother and I rolled ourselves over to Fenway for our first game of the year!

Once we got in, we immediately got a beer.  I mean who can resist an $8 CAN of Beer, right?  Fenway- are you serious- 8 bucks for a CAN of beer!
 I did find their strategies for pouring the beers quite beneficial however.  Pretty funny stuff! No foam!
 The Red Sox lost because no one could actually figure out to how to HIT the ball.  But it was a fun night anyway with my big brother.  But we're old and bounced before the end- hey we beat the crowd!  (I'm a grandma).  Plus I had to wake up early to get down to Providence to cheer for my running buddies!  (More on that later...)
