It's Fall Season!

On Saturday, Dave and I picked out the perfect pumpkin.  It's officially fall!
And with fall comes Pumpkin and Squash season! Sunday morning I woke up (after 10 glorious hours of sleep) and made Pumpkin Pancakes. I'm not the best pancake maker (I usually burn the outside and undercook the inside) but these were pretty good and pretty healthy.
Pumpkin Pancakes
Ingredients:
1 cup whole wheat flour
1/2 cup of whole wheat pastry flour
1 t. baking soda
2 t. baking powder
1/4 t. salt
1 tablespoon of Pumpkin Pie Spice
1 cup of skim milk
1 cup of canned pumpkin puree
2 eggs
2 tablespoon of vegetable oil
1 teaspoon vanilla
2 tablespoon of dark brown sugar
Instructions:
In a large bowl, whisk together the first six ingredients (whole wheat flour through pumpkin pie spice). In a separate bowl, whisk together the last six ingredients (milk through brown sugar). Pour wet ingredients into dry ingredients and blend together with a wooden spoon until just combined. If batter seems too thick to pour, you can gently stir in a little more milk. Drop pancakes by ladleful onto a medium-hot griddle. Pancakes are ready to turn when the edges start to look a little dry and you can see small bubbles forming on the surface.
I also made my Baked Banana Oatmeal for the week with the addition of Canned Pumpkin! I was thinking of adding pumpkin to my normal baked oats for awhile but using an 8X8 pan instead of a loaf pan.  Then I saw Lauren make something similar and knew I had to try it!
Baked Banana-Pumpkin Oatmeal
Combine the dry ingredients:
2 cups rolled oats
1 tsp baking powder
1/4 tsp kosher salt
1 teaspoon of brown sugar
Combine the wet ingredients:
1 egg, beat
1 mashed banana

3/4 cup Canned Pumpkin
1.5 cups unsweetened almond milk or other milk you have on hand
1 tsp vanilla

Instructions:
Pour the wet ingredients into the dry. Mix well. Spray some cooking spray in a 8X8 pan then add the mixture and bake at 350 for 20-30 minutes. Cut into squares.

Next up, I wanted to use two of my CSA Squashes I got last week.  I decided to make a Stuffed Acorn Squash AND prep my butternut squash for Monday nights dinner.  All about prepping ahead!
I roasted the two squashes with a little butter, olive oil, a tiny bit of maple syrup and salt and pepper.  Into the oven at 400 for about 50 minutes the fall squashes went.

When they came out, they were perfect!
Then I followed an easy process- stuffing the Acorn Squash!

This recipe is inspired by a dish I saw in a magazine called (I think) Dinner for Two and it was for Stuffed Butternut Squash.  But I decided to use my Acorn Squash instead.
Kale & Sausage Stuffed Acorn Squash
Ingredients:
1 Acorn Squash, sliced in half, seeds removed
Maple Syrup, Olive Oil, Salt and Pepper
1 package of Apple Chicken Sausage
1 Onion, chopped
1 tablespoon of minced garlic
1 apple, sliced in small pieces
1 cup of chickpeas
1 cup of cherry tomatoes sliced in half
2 cups of kale
1 ounce of cheddar cheese
Instructions:
Preheat Oven to 400. Cook Acorn Squash on a baking sheet.  Put some butter on the squash, salt and pepper and a tiny bit of maple syrup.  Bake in oven for 45-60 minutes. Saute Garlic and Onion in Hot Skillet with EVOO.  Add sliced sausage and saute until lightly browned then add chopped cherry tomatoes, apples, chickpeas and kale.  Mix together until Kale is wilted.  Turn off from heat and add cheese. Then fill the squash with the delicious filling!
This was seriously one of my favorite dishes I've made in a long time.  This is the true definition of fall comfort food.  And it was so simple!

Tonight I made another fall rich dish: Butternut Squash Risotto.  The creamiest dish you can eat, without the cream!  This was my second attempt at risotto and first successful try. The key is to add the stock in small ladles and to be PATIENT.  A word I clearly don't know very well.
Butternut Squash and Chicken Sausage Risotto
6-8 cups chicken broth 
3 Tbsp unsalted butter, divided into 2 Tbsp and 1 Tbsp
1 small onion, finely chopped
2 cups butternut squash, peeled, and finely diced and roasted (I did this the day before)
2 cups arborio rice
1 cup dry white wine

1 cup of diced chicken sausage (3 links), sauted in hot skillet
2 tablespoons of marscapone cheese
1 cup freshly grated Parmesan cheese
2 Tbsp chopped chives or garlic chives
Salt

Instructions:  
Heat broth in medium sized saucepan and keep warm over low heat. Melt 2 Tbsp of butter in a large saucepan; add onion. Cook over medium heat until onion is translucent, about 5 minutes. Add rice to onion. Cook 1 to 2 minutes. Add wine. Cook, stirring constantly until wine has been absorbed by the rice or evaporated. Add a few ladles of broth, just enough to barely cover rice. Cook over medium heat until broth has been absorbed. Continue cooking and stirring rice, adding a little bit of broth at a time, cooking and stirring until it is absorbed, until the rice is tender about 15 to 20 minutes. During the last minutes of cooking, add remaining tablespoon of butter, marscapone cheese, 1/3 cup Parmesan, and chives. Add in butternut squash and sausage. At this point the rice should have a creamy consistency. Add salt to taste. Serve with remaining grated Parmesan. Add chives to garnish.

Boston Public Library Wedding!

 Last Saturday, Dave and I drove into Boston for one of my closest friend, Joanna's wedding.  It was a perfect day- 80 degrees in Boston on September 25th is almost unheard of!  This view on the pike (above) is one of my favorite views of the city.  Before the ceremony, I took some pics of the gorgeous city.  I love Boston!
 I used to work in the Hancock tower.  So pretty!  And then we made our way over to the main event: The Boston Public Library!
 It was such a beautiful venue. Joanna and Dean had their ceremony in the courtyard and it was gorgeous.  Right in the middle of the library, the courtyard had beautiful views of the city.
 I was the greeter and handed out the programs and helped people get their table numbers.
 Speaking of table place-cards- look how cute this is!
 
The ceremony was interfaith and it was so well done.  
My favorite part was how Joanna planned the Seven blessings. 
*The Seven Blessings are a key part of a traditional Jewish wedding ceremony. The blessings are adapted from ancient rabbinic teachings, beginning with the blessing over the wine and ending with a communal expression of joy. In many ceremonies the prayers are read or chanted in both Hebrew and English. There are also numerous modern English variations on the blessings.Many couples also ask friends or relatives to read some or all of the blessings, or may ask all the guests in attendance to read the blessings from a wedding program. Some couples create their own blessings, or ask honored guests to create their own. (Source)
Joanna and Dean chose to have guests read them 7 blessings (or stories) based on keywords on marriage and advice.  Some were about laughter, friendship, marriage, love- Joanna help me out with the rest! But let's just say there were a of Sex and the City quotes!

 It went from lightness, to dusk to darkness during the ceremony.

 Okay now on to food... you know you all want to see it.  I missed the appetizers because I was too busy drinking Champagne with a splash of cranberry juice.  (Yes, three in one hour)
First course- Salad with Chevre, poached pear, pecans and delicious vinaigrette! I loved this dish.  The flavors worked together perfectly.
Main Course: Miso Roasted Salmon with Bok Choy, Pea Shoots, Jasmine Rice and Black Sesame Seeds.  Asian Flair for a delicious dinner!
 
And dessert, Cake!  It was Carrot Cake.  Delicious!
 They also had some mini-ice cream cones. Yum!

 And my favorite picture of the night!  Joanna looked absolutely gorgeous and so happy.  It's so emotional seeing your friends you've grown up with get married.  Joanna and have known each other for almost 20 years.  We went to camp together and sat at the same mixed table then became pen-pals for years and years.  We got our closest during and after college and relied on each other through heartbreak and love.  I am SO so lucky to have met such an amazing friend many many years ago!  I love you Jo! Congrats!
*The Boston Public Library was a gorgeous location for a wedding.  I loved the courtyard where the ceremony was held!  The food was great and the band was amazing.  If you are a bride in the Boston area, check this location out!

Twenty Miles!!!!!!

After last weeks disastrous run, I was really hoping for a strong run.  I had a good solid week of workouts and everything felt pretty good.  The plan was to meet at Nancy's at 6am.  She only wanted to do 10 because she is running a 5K later on today and she is in taper mode for her marathon.  I, however, am not.  I have this planned 20 and then another 20 planned for October 16th.  With this plan, it meant that I would have to run 10 miles by myself which is a good challenge.  The first 10 miles on the run, we ran fast.  Nancy is trying to break 4 hours in her marathon on October 17 so I was along for the fast ride.  I felt fine but knew I wouldn't be able to hold that pace after Nance left.  Here's the stats:

Obviously after Mile 14 I started to fade a lot.  I was holding on and repeating the mantra: "I will not let running torture me." Honestly, I really felt so good cardio-vascularly, but my legs weren't moving too fast.  But I'm happy.  Another 20 Miler down!  One more to go before NY 11/7/10.  Bring it on NY!  I'm excited now!!!

And for all you marathon newbies who are in taper mode- read this post I wrote before my first marathon.  You can do it!

One more note... this was my pre-run fuel last night. 

Nothing beats Vegetarian pizza from our local pizza shop.  Mmmmm... Pizza is the best fuel, right Jen?

Eggplant Galore


On Monday night I made burgers with sweet potato fries.  {No not the Trader Joe's Frozen Sweet Potato Fries (Mike)} BUT homemade ones!  I wanted to do something fun with the burger.  All I knew was Dave (the hub) wanted meat, bad.  So at first I was going to make Cara's Fig Burgers, but I couldn't find Figs at the grocery store.  Speaking of grocery stores, I went to the Shaw's in Back Bay on Monday night after work.  City grocery shopping is SO much different than the burbs! The aisles seemed to go on forever-- it was a very Loong store which makes sense since its right in the heart of the city.  Anyway, I'm sorry Melissa, but I ended up buying these 100 calorie buns.  Mainly because I had already passed the bakery aisle with the good rolls and there was nothing else!  But it was probably good to save some calories since we were eating MEAT!  (In case you don't know, Melissa writes a blog post every Thursday called Three Things Thursdays where she talks about things that are annoying her... a couple weeks ago she blogged about how annoying 100 calorie thins are which I totally agree with.. but made an exception tonight...) Anyway... I decided to make Nacho burgers.. with salsa, cheese, onions, spices, and tortilla chips.  I had hoped it would be really spicy but it wasn't- but it was delicious and totally hit the spot!
Nacho Burgers and Sweet Potato Fries
Ingredients:
(Makes 4 Burgers)
1 Pound of 93% Lean Ground Sirloin
4 pieces of Colby Jack Cheese, Cut into squares + 4 Slices
2 tablespoons of chili powder
1 tablespoon of grill seasoning
1 tablespoon of cumin
1/2 cup of salsa
1/2 cup of crunched tortilla chips
1/2 cup of breadcrumbs
1 egg
1 onion, sauteed with garlic
2 Sweet Potatoes, Skin removed and sliced into sticks
2 tablespoons of olive oil
salt and pepper
Instructions:
In a bowl, combine the ground sirloin, chili powder, grill seasoning, cumin, salsa, egg, crumbled chips, breadcrumbs and cooked onion. Mix well. Take a small handfull and take a cheese square and place in the middle of the burger then take another handful of meat and secure over it to form a cheese stuffed burger.  Repeat 3 more times.  Cook in a large hot skillet for 3-6 minutes on each side.  If you aren't sure if it is cooked through you can cook in the oven for a few minutes longer and add the extra slice of cheese until melted.  Add extra salsa on top.
Fries:
Saute sweet potato sticks in a hot skillet with olive oil for 5-10 minutes. Transfer to baking sheet, season with olive oil, salt and pepper and bake for 15 minutes. Sauting it first speeds up the time it takes to cook these fries (in my opinion!)
Tuesday night I took all my delicious CSA veggies and made Gretchen's Roasted Eggplant Ratatouille.  I cooked the roasted eggplant when I already had the oven hot on Monday night.  Prep ahead- it always works for me : )  This dinner came together so quickly and it was sooo delicious.  In Gretchen's recipe, you are supposed to cook all the veggies separate, but I just added them all at the same time and it worked well for me.  I finished this dish up with a poached egg.  Poached eggs make the dish. I love the runny egg over the fresh vegetables!
Roasted Eggplant Ratatouille
adapted from Molly Wizenberg's A Homemade Life and Gretchen!
Ingredients:
1 large eggplant, sliced into 1" rounds
EVOO
1 large zucchini or summer squash, trimmed, halved lengthwise, and sliced into 1/2" half moons
1 medium onion, thinly sliced
1 large red bell pepper, cored, seeded, and chopped
4 large garlic cloves, thinly sliced
2 large tomatoes, chopped
2 tsp herbs de provence
salt & pepper
Instructions: 
Preheat oven to 400ยบ. Brush both sides of eggplant with EVOO, and lay them in a single layer on a rimmed baking sheet. Roast for about 30 minutes, flipping half way through, until soft and golden.  Set aside (can be made up to 2 days ahead). Heat Oil in a large skillet over medium-high heat. Add zucchini and cook, then add onions red pepper and garlic and cook about 6 more minutes and then add tomatoes, herbs, and salt and pepper to taste.  Cover and reduce heat to low. Add eggplant and simmer on low for about 15 - 20 minutes. Serve topped with a poached egg.
Wednesday night I continued on my eggplant theme and made Eggplant Pizza AND Eggplant Parmesan.  I cooked two meals, one for Wednesday and one for Thursday.  I knew I was going to work late on Thursday so I wanted Dave to have dinner.  Both were inspired by We are Not Martha.  Both were delicious.  Although, Dave may have asked "Is there chicken hidden in this..." However, I think, secretly, he is enjoying the meatless dinners, but I'm not sure he would admit it.  
 Eggplant Pizza
Ingredients:
Store Bought Pizza Dough
1 large eggplant
Olive oil
1 Cup of Shredded Mozzerela Cheese
1/8 Cup grated parmesan
2 cloves minced garlic
1/2 t dried red pepper flakes
Instructions:
Cut eggplant into 1/3-inch rounds and arrange in 1 layer on a baking sheet. Brush both sides with a little bit of olive oil and season with salt and pepper. Broil the eggplant on each side for 4-6 minutes until lightly crisp. Roll out pizza dough on baking sheet.  Brush olive oil on dough and sprinkle half the cheeses over the dough.  Place the eggplant on the dough and sprinkle with remaining cheese, crushed garlic and red pepper flakes.  Bake at 400 for 15-20 minutes.
 
And lastly, I made Eggplant Parm.  Can you tell I got a lot of Eggplant in my CSA?  I did something different and fried the eggplant- I tried to use very little oil but still frying is not the healthiest choice.  I also decided to use zuchinni in this dish as well and it turned out to be cheesey and hearty.
 Eggplant Parmesan 
Ingredients:
2 lbs. eggplant (about 2 large eggplants)
1 small zuchinni
1/2 Bottle of your favorite tomato sauce
1/2 C all-purpose flour
1/2 C fine, dry breadcrumbs
3 large eggs, beaten
1 cup shredded mozzarella
1/2 cup grated parmesan cheese
Instructions
Cut eggplants lengthwise into 1/4 inch slices. In a wide, shallow bowl, combine flour and breadcrumbs. Mix well. Pour beaten eggs into another wide shallow bowl. Place a large, deep skillet over medium heat, and pour in a a half inch of olive oil. When oil is shimmering, dredge the eggplant slices first in the flour mixture, then in the beaten egg. Working in batches, slide coated eggplant into hot oil and fry until golden brown on both sides, turning once. Drain on paper towels.Preheat the oven to 350°F. In the bottom of a 10x15 inch glass baking dish, spread 1 cup of tomato sauce. Top with one third of the eggplant slices. Top eggplant with half of the mozzarella. Sprinkle with one third of the Parmesan and half of the zuchinni. Make a second layer of eggplant slices, topped by 1 cup of sauce, remaining mozzarella, half the remaining Parmesan. Add remaining eggplant, and top with the remaining tomato sauce and Parmesan. Bake until cheese has melted and the top is slightly brown, about 30 minutes. Allow to rest at room temperature for about 10 minutes before serving.
  
 I tasted this but didn't get to enjoy it and I tend to doubt that there is any left! So Dave, was it good?

Running Update: I woke up Monday with NO PAIN and I have had no pain in either achilles all WEEK!  That's not to say other pains haven't popped up- hip flexor and left hamstring, but nothing serious I don't think. I did a HARD eliptical workout Monday and Thursday went to Physical Therapy on Wednesday and today and ran a pretty easy 5 on the treadmill on Tuesday.  I wanted to run again on Thursday but my Physical Therapist wanted me to play it safe.  If all goes well on my long run tomorrow, he says I can run my normal schedule again next week (cross your fingers for me!)

My plan tomorrow is to 4 FIVE mile runs.  Yes, that means a 20 miler.  I am just trying to break it up into something else. Wish me luck!  Have a great weekend : )
