Much Needed Day Off

I took today off from work to spend time with my family and ended up sleeping until 10:15AM! Insane. I almost never sleep that late on the weekends, but I guess I needed it! I lied out on my deck drinking my coffee and then I came in to make breakfast. I ended up making a sunnyside egg with wheat toast and avocado dip.


Then I went running. It was pretty hot and I decided half way through my normal route to stop in at my moms house and surprise my grandparents. Then we all decided to head back to my house to watch last nights So You Think You Can Dance. My nana loves that show! While we watched, I ate an Arnold Sandwich Roll filled with Cheddar Cheese and Avocado.

Then I ran some errands and when I got home I made a Panzanella and White Wine Sangria! I am enjoying a glass now while I wait for Dave to get home! We are heading to my mothers for a BBQ to celebrate Mikey and Natalia! There wedding is tomorrow! Can't wait!

Panzanella

Ingredients:
1/4 Cup of Spinach
3 Slices of Wheat Bread
1/2 a White Onion, thinly sliced
15 Cherry Tomatoes, sliced
1/4 Cup of Chicken Broth
3 teaspoons of balsamic vinegar
salt and pepper
1/4 cup shredded mozzarella


White Wine Sangria
(this recipe is still a work in progress- not quite satisfied yet)

Ingredients:
1 bottle of Prosecco
1/2 Liter of Sprite (supposed to be Ginger Ale but we didn't have any)
Chop up tons of fruit- frozen peaches, raspberries, oranges, lemons, limes, blackberries, diced green apples
1/4 Cup of Sugar or to taste

Mix together in a pitcher over ice and server.
Mix together in a bowl with and serve! Not sure when we will eat this, but I saw a recipe similar and it looked like fun. Maybe tomorrow for lunch?

Morning= Luna Bar


Lunch= Turkey, Provolone, Spinach, Honey Mustard on Whole Wheat Cosi Flatbread


Mid-day snack= side order of tomato basil sooup from Cosi- no pictures

Dinner (at 9:15!!!)= Brisket, Mashed Potatoes and Salad with my family at my mothers house. Dave really wanted to take an action shot!
